Турецький суп з сочевицею

Ділюся з вами одним з найулюбленіших мною рецептів. Щоразу, доїдаючи останню тарілку цього неймовірного супу, я вже планую, коли буду готувати його в наступний раз. Він поживний, з кремовою текстурою та дуже яскравим смаком. До речі, про смак! Цей супчик підійде як для вегетаріанців, так і для м’ясоїдів, а все залежить від того, що оберете за основу – овочевий бульйон, м’ясний бульйон або просто воду. А жирні вершки можна спокійно замінити кокосовим молоком. І ось у вас вже не один рецепт, а цілих 4. І це не все! Сочевицю можна брати будь-яку, при цьому, попередньо замочувати її не потрібно. Сам же суп-пюре готується близько 30 хвилин – що є великим плюсом.

Ще одна корисна порада від мене – приготуйте бульйон заздалегідь і зберігайте у спеціальних пакетах із застібкою (зіп-локах) в морозильній камері. Коли виникне нестримне бажання приготувати цей суп, просто достатньо розморозити  готовий бульйон та слідувати рецепту. Буду рада, якщо ви, так само як і я,  полюбите цей, до речі, турецький суп-пюре з сочевицею.

Складники

  • 1000 + 200 мл. води/ бульйону
  • 170 гр. сочевиці
  • 1 морква
  • 1 цибулина
  • 15 гр. вершкового масла
  • 30 гр. соняшникової олії
  • 1 ст.л. борошна
  • 70 мл. вершків 21-33%
  • 1 ч.л. меленого перцю
  • сіль за смаком
  • зелень і підсмажений бекон для прикрашання

Приготування

1.Спочатку окремо промийте сочевицю. 1 літр води (або бульйону) налийте в каструлю, засипте в неї сочевицю і поставте на середній вогонь, доведіть до кипіння. Як тільки закипить, зменшить вогонь до мінімуму, зніміть пінку, що утворилася, і варіть ще протягом 10 хвилин.

2.Поки вариться сочевиця, приготуємо цибулю з морквою. Для цього цибулю необхідно дрібно нарізати, а моркву натерти на крупній тертці. У розігріту сковороду налийте олію і додайте шматочок вершкового масла. Спочатку обсмажте цибулю 1-2 хвилини, потім додайте моркву і смажте помішуючи 4-5 хвилин, поки овочі не стануть м’якими. Наприкінці посипте овочі борошном і продовжуйте смажити ще 3 хвилини.

3.Овочеву суміш пересипте в каструлю з сочевицею і перемішайте. Посоліть та поперчіть. Якщо вам хочеться більш гострий суп, сміливо додавайте ще перцю.
Зніміть каструлю з плити, влийте в суп вершки і акуратно, за допомогою ручного блендеру, збийте до консистенції однорідного пюре.
Прикрасити суп можна як зеленню, так і шматочками смаженого бекону, в залежності від ваших уподобань. Легкого вам приготування!
