По окончании холодных зимних месяцев мы с нетерпением ожидаем теплой весны, а вместе с ней и пасхальных праздников. Чтобы ускорить приближение тепла и возвращение птиц из теплых краев, мамы и бабушки вместе с малышней издавна выпекали крохотных птичек из теста размером с детскую ладошку. Названия этих птичек отличаются в зависимости от местности. Для кого-то привычны названия «жаворонки» или «кукушечки». Еще встречаются «гусыни», «уточки» и «соловушки». Какое бы название для булочке в форме птички мы ни выбрали, на вкус это точно не повлияет. Пекут жаворонков и к пасхальным праздникам. Эти птички не только украшают пасху, но и становятся символом долголетия для всей семьи.

По форме жаворонки тоже могут отличаться, ведь все зависит от вашего воображения. Когда готовишь с детьми, не нужно ограничивать полет их творческой фантазии. Признаюсь, что дети, кроме птичек, слепили еще жаб, пару черепах и улиток.

Хочу поделиться с вами рецептом «жаворонков», который я узнала от одной очень хорошей и задорной бабушки. Тщательно отмеренного количества муки не указываю, ведь моя бабушка никогда не использует весы. Но это не повод для беспокойства — просто чувствуйте тесто и следуйте подсказкам в рецепте.

Приблизительно на 20-25 птичек (при желании порцию можно увеличить вдвое)

Для квашни:

  • 2 стакана теплой кипяченой воды или теплого молока
  • 50 г свежих дрожжей или пакетик сухих (11 г)
  • 1 ст. л. сахара
  • добавить просеянную муку до консистенции теста для оладий

В тесто добавить:

  • 50–70 г растительного масла
  • щепотку соли, разведенную в капле воды
  • сахар по вкусу
  • просеянную муку (столько, сколько возьмет тесто)

Для украшения:

  • изюм, звездочки гвоздики, цукаты
  • сиропная вода

1. Приготовьте квашню, по консистенции похожую на тесто для оладий. Для этого необходимо развести дрожжи в теплой жидкости, добавить сахар и замесить тесто. Оставьте квашню на 30-40 минут. За это время она поднимется и немного осядет. Влейте в квашню растительное масло, добавьте сахар и щепотку соли, разведенную в воде. Подсыпая муку, замесите мягкое тесто, которое не липнет к рукам. Разделите тесто на 4 равные части. Каждую часть разделите на 6-8 заготовок для будущих «жаворонков».

2. Чтобы слепить птицу, сформируйте валик теста толщиной до 2 сантиметров и длиной до 10 сантиметров.
Свяжите валик в узелок. Из одного кончика пальцами сформируйте головку и клюв птички, а другой расплющите ладонями и сделайте надрезы для хвоста ножом. Глаза «кукушечкам» можно сделать из изюминок или звездочек гвоздики. По желанию украсьте хвост и крылья цветными цукатами.

3. 2. На смазанный растительным маслом противень выложите «жаворонков», оставьте булочки подниматься в теплом месте на некоторое время (15-20 минут вполне достаточно). Выпекайте в течение 20-25 минут в разогретой до 180°С духовке. Разведите 1 столовую ложку сахара в 100 миллилитрах кипяченой воды и этим сладким сиропом полейте только что испеченные булочки.
