Это самый вкусный дрожжевой кулич, который всегда пекла моя мама. Из приведенных ингредиентов получаются два средних или три небольших кулича (как на фото). Можно смело использовать две формы большего размера — тогда куличи будут высокими и внушительными. Не сыпьте дополнительную муку, тесто не должно «отставать от стенок миски», но замешивать его нужно минут 15-20.
Тесто хорошо поднимается, выпечка получается очень нежной, пышной, пористой и, как для дрожжевого теста, достаточно долго остается свежей.

На 3 небольшие или 2 средние формы

Подготовка:
30 минут + поднятие теста
Длительность выпекания: 30-40 минут (в зависимости от размера формы)

  • 550 г муки
  • 50 г свежих дрожжей
  • 6 желтков
  • 1 яйцо
  • 1/2 ч. л. соли
  • 1 стакан молока
  • 100 г сахара
  • 120 г масла (растопленного и охлажденного)
  • 100 г изюма
  • цедра 1 лимона
  • смалец для смазывания формы
  1. Активируйте дрожжи (покрошите в миску, посыпьте 1 столовой ложкой сахара и добавьте немного теплого молока). Оставьте при комнатной температуре до тех пор, пока на поверхности не появятся пузырьки.
  2. Залейте изюм кипятком (для аромата можно добавить 2-3 столовые ложки ликера).
  3. Желтки и яйцо взбейте с сахаром до образования пышной массы.
  4. Просейте муку в миску и сделайте углубление. Добавьте дрожжевую смесь, взбитые яйца с сахаром, соль и остаток молока. Замесите тесто вручную. В конце постепенно вливайте растопленное и охлажденное сливочное масло и вручную или миксером заместите гладкое эластичное тесто (в течение 15-20 минут). Накройте его чистой льняной салфеткой и оставьте до удвоения объема. Подготовьте формы для выпечки, смазав их растопленным сливочным маслом или смальцем (без запаха).
  5. Обомните тесто и добавьте процеженный и посыпанный 1 столовой ложкой муки изюм. Замесите тесто с изюмом и разложите в формы, заполняя их на 1/3 высоты. Оставьте тесто подниматься в теплом месте без сквозняков (тесто должно подняться до краев формы).
  6. Выпекайте в разогретой до 170°С духовке в течение 30-40 минут (проверяйте готовность с помощью деревянной палочки).
  7. Оставьте куличи в формах на 5-10 минут, после чего осторожно вытащите их и дайте полностью остыть.

Для белковой глазури:

  • белок 1 яйца
  • 120-180 г сахарной пудры
  • 3-4 капли лимонного сока

Накануне приготовления глазури отделите белки от желтков. Оставьте на ночь в холодильнике. Можно использовать замороженные. Для этого положите белки на ночь в холодильник. Идеально подойдут также те, которые остались после замешивания теста. Поместите белки, сахарную пудру и лимонный сок в сухую стеклянную посуду. Взбивайте на самой низкой скорости миксера в течение 10-15 минут.
На высокой скорости в массу будет проникать воздух, что может привести к растрескиванию глазури на готовых куличах. С помощью лопатки равномерно распределите глазурь на поверхности готового кулича.
По желанию украсьте орехами, миндальными хлопьями или дольками цитрусов.
