Аґрус після теплової обробки набуває дуже цікавих ноток смаку та текстури, скоріш за все чимось нагадує ківі. Пару років тому я готувала простий листковий пиріг з кремом та аґрусом, і нам він тоді прийшовся до смаку. Цьогорічний рясний врожай жовто-зелених плодів нагадав мені про забутий рецепт і я вирішила повторити його, додавши декілька змін, а саме – приготувати десерт у зручних формах для міні-тартів. Вийшли симпатичні тістечка, по одному на порцію, з повітряними меренговими верхівками. Крем – мій улюблений – схожий на заварний, з жирної сметани або вершків, жовтками та крохмалем, простий у приготуванні й завжди безпрограшний.
Складники
- 500 гр. листкового без дріжджового тіста
- 400 гр. аґрусу
- 200 мл. вершків або жирної сметани
- 4 шт. яєць
- 150 гр. цукру
- 2 ст.л. кукурудзяного крохмалю
- 1 ч.л. ванільного екстракту
- 1 ст.л. лимонного соку
Приготування
1.Тісто розморозити і розкачати. Розкласти тісто по порційним формочкам, або в одну велику форму для тарта. Гарненько розправити тісто та притиснути до дна форми.
2.Аґрус проварити 5 хвилин в окропі.
3.Відокремити білки від жовтків. Поєднати до однорідної консистенції жовтки, сметану або вершки, кукурудзяний крохмаль, екстракт ванілі та 75 гр. цукру.
4.Розкласти аґрус по формочкам, залити сметанно-яєчним кремом. Випікати за температури 200 градусів 15 хвилин.
5.Білки збити в піну. Додати лимонний сік, всипати порціями решту 75 гр. цукру і збити до м’яких піків. Наповнити білками кондитерський мішок і висадити пухкі хмаринки білків на тарталетки. Повернути їх в духову шафу ще на 10 хвилин. Перед подачею остудити.
