Ризото з білими грибами

на 4 порції

  • 200 г рису типу арборіо
  • 300 г свіжих білих грибів (можна використовувати заморожені, розморозивши їх на нижній полиці холодильника за добу до приготування страви)
  • 40 г сухих грибів, стертих у порошок
  • 2 зубчики часнику
  • 5 столових ложок оливкової олії
  • ½ склянки сухого білого вина
  • 40 г вершкового масла, нарізаного кубиками по 2 см
  • 60 г тертого пармезану сіль
  • мелений чорний перець
  • ¼ чайної ложки мускатного горіха приблизно 1 літр окропу

1.У каструлі з товстим дном на середньому вогні підсмажте часник до золотистого кольору. Додайте нарізані великими кусками гриби й готуйте, помішуючи, 4 хвилини на середньому вогні. Додайте рис і сухі гриби та 2 хвилини готуйте на середньому вогні, постійно помішуючи. Ризото треба помішувати дерев’яною лопаткою, рухаючись від себе й назад.

2.Додайте вино й випарюйте 2 хвилини. Додайте 1-2 черпаки гарячої води, посоліть, посипте мускатним горіхом і готуйте, не накриваючи кришкою й час від часу помішуючи. Коли води стане мало, долийте 1 черпак і продовжуйте так готувати, поки рис стане майже «аль денте»: він має бути майже готовим, але залишатися твердим і не бути сухим; ризото на цій стадії нагадує густу кашу.

3.Зніміть каструлю з вогню, додайте кубики вершкового масла й «збийте» ризото — енергійними рухами вперед-назад перемішуйте ризото з вершковим маслом протягом двох хвилин, додайте половину пармезану й збивайте ще 30 секунд. Накрийте кришкою й дайте постояти 2 хвилини.

4.Розкладіть у тарілки, поперчіть, посипте пармезаном, що залишився, і одразу ж подавайте.
