Заварне тісто з цього рецепта використовують для еклерів, профітролів і шу, а кондитерський крем можна подавати як самостійний десерт із ягодами та фруктами або використовувати для тортів.
Інгредієнти на приблизно 20 штук
- 225 мл води
- 100 г вершкового масла, нарізаного кубиками по 2 см
- 105 г просіяної муки
- 4 яйця
для кондитерського крему:
- 100 мл молока
- 160 г масла
- 140 г цукру
- 1 стручок ванілі
- 1 яйце
- 10 г порошку какао
для глазурі:
- 50 г розтопленого чорного шоколаду
- 50 г цукрової пудри, змішаної з 2 столовими ложками води
1.Увімкніть у духовці режим «класичний нагрів (зверху+знизу)», задайте температуру 200°С.
2.У сотейнику на слабкому вогні нагрійте воду й масло та готуйте, поки масло не розтопиться повністю й рідина не почне закипати. Додайте муку та збивайте дерев’яною або силіконовою лопаткою, поки суміш не стане однорідною. Продовжуйте готувати на слабкому вогні, постійно помішуючи, поки суміш не почне підніматися до країв сотейника. Зніміть із вогню та вбийте яйця по одному.
3.Заварне тісто перекладіть у кондитерський мішок і видавіть на деко, застелене папером для випікання, кульки діаметром 3 см. Можна акуратно викладати кульки ложкою.
4.Поставте деко в духовку на середній рівень і випікайте 20 хвилин, доки тістечка не стануть золотистими. Вимкніть духовку, не виймаючи деко. Залишіть дверцята привідкритими; можна їх заблокувати, просунувши в щілину дерев’яну ложку. Залишіть профітролі в теплій духовці ще на 15 хвилин, а потім вийміть деко, перекладіть тістечка на решітку та дайте їм вистигнути.
5.Приготуйте кондитерський крем. У сотейнику змішайте молоко, злегка збийте яйце, цукор і стручок ванілі, і на найменшому вогні доведіть до кипіння. Викиньте стручок ванілі й варіть кілька хвилин на найменшому вогні. Сироп має загустіти. Зніміть сироп із вогню, перелийте в миску й охолодіть до кімнатної температури. Міксером збийте масло, потім, продовжуючи збивати, влийте частинами охолоджений сироп. Отриманий крем розділіть на 2 частини. В одну всипте какао та ще раз збийте.
6.Крем перекладіть у кондитерський мішок із тонкою насадкою та видавіть у кожне тістечко трохи крему, протикаючи отвори на дні. Потім змочіть верхівку тістечка в розтоплений шоколад або цукрову глазур.
