1.Приготуйте тісто. У великій мисці змішайте цукор, ванільний цукор, дрібку солі й масло та збийте електричним міксером на невеликій швидкості. Додайте жовток і збийте ще раз. Додайте муку за 3 підходи, перемішуючи тісто силіконовою або дерев’яною лопаткою.
2.Покладіть на робочу поверхню лист паперу для випічки, присипте його мукою, перекладіть на нього тісто й розкатайте коло діаметром трохи більше діаметра форми. Акуратно перекладіть тісто у форму. Якщо воно десь порвалося, розгладьте його пальцями, наче пластилін. Поставте форму з тістом на 10 хвилин у морозильну камеру.
3.Увімкніть у духовці режим «класичний нагрів (зверху+знизу)», задайте температуру 180°С.
4.Приготуйте начинку. У мисці змішайте маскарпоне з рікотою. Додайте цукор і перемішуйте, поки маса не стане однорідною. Збийте яйця й добре перемішайте. Додайте лимонний сік і ще раз добре перемішайте.
5.Вийміть із морозильної камери форму з тістом. Викладіть начинку на тісто й розрівняйте лопаткою. Поставте в духовку на середній рівень і випікайте 30-40 хвилин. Поверхня торта має стати щільною, а тісто — золотистим. Охолодіть на решітці. Подавайте, посипавши цукровою пудрою.
