Ленивый сырник — далекий родственник чизкейков, сохранивший с ними сходство, но все-таки назвать его чизкейком язык не поворачивается. Итак, на 3-4 порции нам понадобятся такие ингредиенты.

На корж:

  • 100 г галетного печенья наподобие печенья «Мария»
  • 2 ст. л. сгущенного молока
  • цедра половинки лимона
  • 2 ст. л. кокосовой стружки

На суфле:

  • 500 г свежего сыра
  • 10 г желатина
  • 1 банан
  • сок половинки лимона
  • 3 ст. л. сахарной пудры
  • мандарины, шоколад, кокосовая стружка для украшения

Приготовление:

Раздробить печенье в блендере в крошку, но не до состояния муки. Смешать с кокосом, сгущенкой и цедрой и тщательно утрамбовать в формочки.

Желатин залить 50 миллилитров горячей воды и размешать до полного растворения. В блендере или с помощью вилки пюрировать банан, полить лимонным соком. Сыр смешать с сахарной пудрой, банановым пюре, желатином до образования однородной массы и залить в формы. Поставить в холодильник. Пока сырник понемногу застывает, растопить на водяной бане половину плитки шоколада и очистить мандарин.
Окунуть дольки мандарина в шоколад полностью, наполовину или только кончик по собственному усмотрению, а затем — в кокосовую стружку. Выложить на тарелку и поставить в холодильник на 20-25 минут. Когда шоколад на дольках мандарина застынет, можно украсить ими сырники. А утром заварить кофе, достать блюдо из холодильника и неспешно с удовольствием позавтракать.
