 Хумус прийшов до нас із Близького Сходу. Ця страва має колоритний смак, який легко впізнати і надовго запам’ятати. Хумус – легкий у приготуванні і ситний по своїй природі. Мені дуже імпонує його кремова текстура і можливість розмаїття комбінацій з різними стравами. Хумус можна споживати як самостійну закуску, як додаток у вигляді соусу до лавашу і сандвічам, і навіть, як соус до креветок і овочевих страв. Про те, наскільки ця страва унікальна, смачна, корисна і багатогранна можна говорити не одну годину, але по-справжньому відкрити для себе і близьких смак Східної кухні ви завжди зможете, приготувавши хумус власноруч.

 Складники

  • 280 гр. сухого нута
  • 60 гр. тахіні (кунжутна паста)
  • 50 мл. оливкової олії
  • Сік 1 лимона
  • 2 зубчики часнику
  • 1½ ч.л. кумину
  • ½ ч.л. соди
  • Сіль, перець на смак
  • Паприка і в’ялені помідори для подачі до столу.

1.Нут замочити у холодній воді на 10-12 годин. Коли нут набухне, ретельно промийте його, помістіть до каструлі (бажано з товстим дном), залийте водою і додайте соди. Вода має повністю покрити нут. Доведіть до кипіння і варіть близько 40 хвилин на середньому вогні до готовності. Рідину, в якій відварювали нут, перелийте в окрему ємкість, надалі вона нам знадобиться.

2.В чашу блендера помістіть зварений нут, 70-100 мл. рідини від нуту (додавайте рідину поволі до бажаної консистенції), оливкову олію, тахіні, лимонний сік, часник, кумин, сіль і перець. Всі інгредієнти подрібнити до однорідного стану, подібного до пасти.

3.Готовий хумус викласти у глибоку таріль, поверх викласти горішки відвареного нуту, в’ялені помідори, присипати паприкою і окропити оливковою олією. Подавати до столу з пітою, лавашем або прісними хлібцями.
